ELABORATION
Surrounded by Tempranillo vineyards, the winery is made in the heart of the Rioja Alavesa, at the foot of the Sierra de Cantabria mountain range and in soils that are perfect for its cultivation.
Vineyards over 40 years old are harvested only when the grapes reach optimum ripeness; once in the winery, an exhaustive manual selection and destemming process is carried out.
Subsequently, alcoholic fermentation and malolactic fermentation begin. We then enter the ageing process, in which the wine remains in oak barrels in the best temperature and humidity conditions until it reaches the desired maturity. Once bottled, it ages at least another 14-16 months to obtain its characteristic bouquet.
SPES is a wine with an apparent Atlantic influence, which reflects this care and attention to detail in its selection and production.
